Chicken & Fresh Herb Sandwiches

Enjoy this refreshing sandwich for lunch or a healthy snack.

Ingredients

  •  3 cups cooked, shredded chicken , 2 loaves bread
  • 1 cup chopped coriander ½ cup chopped mint,
  • 1 clove crushed garlic2/3 cup whole egg mayonnaise,
  • 2/3 cup sour cream ½ cup chopped & roasted cashew nuts

 

Method

 Process coriander, mint, garlic and mayonnaise together.

Stir in sour cream, cashew nuts and chicken. Spread on chicken slices.

Place on fresh bread.

Serving

Serve freshly made on a platter.
